All self-respecting inhabitants of the region have, at one time or another, the joy of “initiating” a novice into the pleasures of this somewhat surprising cheese speciality.
Like it or hate it, it is simply impossible to remain indifferent to this almost liquid cheese made from “metton” cheese, which is raw milk curdled, skimmed and heated.
Cancoillotte, with its creamy, runny texture, can be enjoyed hot or cold, with a little added garlic or white wine.
