The gourmet's tour of Franche-Comté will continue on through pastures and forests. The innumerable herds of red and white Montbéliard cattle grazing in the prairies which seem to merge into the horizon are what we have to thanks for the different types of cheese on our platter. It is here in the mountains that we will find the ancient rural cooperatives which continue to make famous French cheese in accordance with traditional methods.
