The Holy Roman Emperor Charles V, Henri IV, Napoleon and Talleyrand were all fond of Château Chalon wine.
It was in the town of Arbois that Louis Pasteur established his laboratory to explore phenomena related to the process of vinification and fermentation. The reputation of the Jura vineyards, whose origins can be traced back to the last years of the first millennium (if certain municipal archives are to be believed), has never ceased to grow from then. The region boasts several grape varieties (Poulsard, Chardonnay, Pinot, Savagnin and Trousseau), four geographical appellations (Arbois, Côtes du Jura, l'Etoile and Château Chalon) and two product appellations (Macvin and Crémant du Jura).
This list is completed by yellow wine (unique to France), straw wine, Crémant (sparkling wine) and marc brandy wine. The Jura vineyards often benefit from extraordinary micro-climates. The Jura Wine Institutes, situated on the superb premises of the Château Pecaud in Arbois, organises courses and wine-tasting sessions for people wishing to learn more about the region's red, white, and yellow wines worthy companions to a local cuisine in which chesses, salt meats and wild mushrooms figure prominently.
