Upper Jura Blue


A curious colour for a cheese


bleu-de-gexThis AOC cheese, made from milk collected only in the pastures on the edge of the woodlands of Upper Jura, is still produced according to ancestral methods.

 

It is made in small dairies, after the curd is left to coagulate at the milking temperature and is then cut and left to drain with salt in wooden tubs.

 

Jura Bleu is different from other blues in that its taste is distinctly more mellow and it has a more scented and slightly bitter flavour.
